Shamrock No Bake Cheesecake Recipe

If this is all the information I gave you, would you know exactly what I was talking about?

1/2 cup of brown rice

1 cup of broccoli

And 8 oz of plain, dry chicken breast…


Less than 400 Kcals… Just another meal to keep you on the fitness grind, right?  But, what if I told you that you could have, maybe, some post workout (or anytime) cheesecake with the SAME macros and calories as the universal bro-meal?  Now, please do not think that I am downplaying the importance of meat and vegetables in a healthy diet.  Consuming micronutrient-rich food will always have its place in maintaining overall general health, and consistency is the foundation of creating a maintainable lifestyle. But, with a little bit of flexibility, who says you can’t enjoy something that will still stay within your normal caloric and macronutrient intake while looking and TASTING like a treat? In honor of St. Patrick’s Day, I made a No-Bake Shamrock Cheesecake with a Lucky Charms Treat Base!



Lucky Charms Treat Base Ingredients:

  • – 1/2 cup Marshmallows
  • – 3/4 cup Lucky Charms
  • – 1 teaspoon Butter


Lucky Charms Treat Base Prep:

Begin by preparing the bottom of a springform pan with parchment paper to prevent sticking. In microwave-safe bowl, heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Add cereal and stir until coated. Spoon mixture into the springform and evenly flatten it out using the back of a spoon across the entire bottom of the pan. Set pan aside and allow to cool

TIP: Sometimes spoons can get stuck to the mixture making this very hard to work with (if you’ve made Rice Krispies treats, YOU KNOW). Once I mix the cereal with the marshmallows, I get my hands wet in HOT water and, surprisingly, the mixture does not stick to you.

Cheesecake Ingredients:

  • – 8 oz Fat Free Cream Cheese
  • – 1 scoop ModernPROTEIN Vanilla Ice Cream Flavor
  • – 1 packet Knox Gelatin
  • – 4 oz Water
  • – 2-3 drops Mint Extract (a little goes a long way)
  • – Sweetener to taste
  • – 2-3 drops Green Food Coloring (optional)


Cheesecake Prep:

In a mixing bowl combine all filling ingredients except for the water and gelatin.  In a separate pot, bring water to a boil and ensure the gelatin dissolves thoroughly. Allow the gelatin mixture to cool slightly and begin mixing into the bowl. Once gelatin mixture is around room temp, begin to mix all ingredients in the large mixing bowl with the gelatin mixture either by hand or with an electric mixer. Pour batter into the spring form pan and place in the fridge for filling to set (approx 3-4 hrs).

Protein: 62g

*The macros are worked out for the cheesecake only. The Lucky Charms Treat Base adds:

5g fat/44g carbs/2g protein
