Recipe – ModernPROTEIN No Bake Peanut Butter Balls

June 25, 2015

You know you were a fat kid when you chose an Easy-Bake Oven over a bicycle, but, hell, I’d do it again! I have a sweet tooth that can only be remedied by real food. A gluten-free, sugared-substituted pre-packaged snack brick just won’t do it for me. The problem, or should I say, the one thing that keeps me from eating whatever I want is I that have below average baking skills. Besides that oven with a 100-watt bulb, I can’t confection much more than a Pop Tart, but I will tell you this; I make one epic toaster pastry. When I get the urge for something sweet that’s actually going to be doable for my limited ability in the kitchen and time, I make these:

(Makes 12 servings)

  • 1 Cup Natural Peanut Butter
  • 1 Scoop “Vanilla Ice Cream” ModernPROTEIN
  • 1/2 Cup Whole Oats
  • 1/2 Cup Chopped Dates or Blueberries
  • 2-3 Tbsp. Dairy or Coconut Milk

Combine ingredients in a large bowl, adding enough milk until a doughy consistency is reached. Roll into bite-sized balls and refrigerate until served.
