Recipe: Spinach, Avocado, and Eggs

It truly is simple; no athlete will reach their potential without a proper diet. Despite the endless parade of sophomoric attitudes about a healthy diet, which often includes a cavalier approach to alcohol consumption, many athletic goals have perished early ‘by the spoonful’.

 

A proper diet is evidence of an athlete’s dedication.

 

The failure to manage a proper diet will only amount to failure and despite many athletes believing they navigate around the issue, it will catch them in time.

 

Breakfast, as the adage suggests, is the most important meal of the day for not only nutritional needs after a proper nights sleep but equally ‘sets the tone’ of the determined. Breakfast choices should provide required nutrition and preferably in the peace of your own home.

Recipe: Spinach, Avocado, and Eggs

 

Ingredients

  • ½ Large Ripe Avocado
  • Sea Salt
  • Lime
  • Spinach (handful)
  • 2 Slices Bread (choose an ancient or sprouted grain)
  • 2 Eggs

 

Preparation

 

  • Peel avocado, removing pit, and place in bowl. Grind until very smooth consistency, adding a dash of lime and sea salt to personal taste. Note: this process can be eliminated if you prefer avocado slices.
  • Clean spinach and ‘shock’ in boiling salted water for thirty seconds. Drain excess water.
  • Poach two eggs (one egg per slice of bread).
  • Spread avocado on top of toasted bread. Alternatively, place sliced avocado (as shown) on top of toasted bread.
  • Place a small bed of cooked spinach on top of avocado before adding a poached egg and serve.
  • As a optional, add a sprinkling of chia, hemp or pumpkin seeds

 

From TEAM USPlabs: Poaching an egg is a lot easier than you may think so forget hard boiled eggs for a minute and try this!

 

Directions for poaching an egg USPlabs style: Bring water in a saucepan to a boil then reduce to a medium-high simmer. Do not add salt. Add a splash of vinegar to the water if you have it to prevent over-cooking the egg whites. Place the egg in a small cup or bowl and slowly slip it into the simmering water (not boiling and not a low simmer), to the point that the cup/bowl is touching the water. Cook for about 3 minutes or until the egg is cooked. Remove from water with a slotted spoon and serve!
