Recipe: Citrus Spiced Grilled Chicken and Hash

 

Eating on a budget doesn't mean you have to skimp out. Piece together your perfect meal by combining the perfect ratio of fat, carbohydrate, and protein in a serving size beneficial toward your goals. Skip the processed foods, and look for those with single (or very few) ingredients. Always go to the store with a plan of action, and never go in hungry!

 

 

 

Think clean, think easy:

  • Bulk chicken breast (save money by buying untrimmed and trimming it your self)
  • Large containers of Old Fashioned oatmeal
  • Whole or shredded potatoes
  • Bulk cans of tuna fish
  • Bulk frozen vegetables

 

This simple, inexpensive meal has been passed down from the bodybuilding legends of the past. Clean, lean chicken breast coupled with some pure carbohydrate for fuel and recovery. The combination is perfect for pre or post workout, with flavor and aroma that'll have your neighbors begging to come over for dinner!

-- Citrus Spiced Grilled Chicken & Hash --

 

Ingredients:

 

  • 6-8oz Fresh Chicken Breast, Trimmed
  • 2 Cups Frozen Shredded Hashbrowns, Plain
  • 2 Tablespoons Extra Virgin Olive Oil or Coconut Oil
  • Lemon Pepper Seasoning
  • Chili Powder
  • Pepper Flakes (Seasoning)
  • Fresh Ground Pepper
  • Sea Salt

 

Heat a medium sized skillet on a stovetop to medium-high heat. Add 1 tablespoon of the oil of your choice. Place the fresh chicken breast in the pan once it's been heated. Add your desired amount of seasoning (chili powder, pepper flakes, fresh ground pepper, sea salt) and cook thoroughly.

 

Once the chicken is fully cooked, remove and place on a plate. Add the remaining tablespoon of oil into the heated pan. Add the frozen shredded hashbrowns to the pan and top with a generous amount of lemon pepper seasoning and mix frequently until they're thoroughly cooked. Feel free to add a little extra spice to the hashbrowns by adding some of the other seasonings you already have out.

 

If you're a salad fan, you can eat an appetizer side salad while you're waiting for this to cook to help pass the time.
