-- Cilantro-Lime Chicken Fajitas --
- 6 Skinless Boneless Chicken Breast, Cut Into Slices
- 6 Whole Grain or Ezekiel Tortillas
- 3 Large Bell Peppers (Green)
- 18 Grape Tomatoes
- 1 Red Onion, Sliced
- 1 1/4 Cups of Coarsely Chopped Fresh Cilantro
- 3 Tablespoons of Ground Cumin
- ¾ Cup of Olive Oil
- 5 Tablespoons of Lime Juice
Mix Cilantro-Lime marinade ingredients in a bowl or use a food processor. Add sliced chicken, peppers, tomatoes, and onions into a large bowl. Pour approximately 3/4 of the marinade into the bowl, and mix to coat well.
Toss the mix into a large greased frying pan/skillet. Some may have to split the mix into half to fit their frying pan/skillet. Cook until chicken is thoroughly cooked. Remove mix and add to heated tortillas. The easiest way to heat the tortillas is to put them into a microwave, covered with a wet paper towel for 30-45 seconds.
Add ingredients to your tortillas. Drizzle with remaining marinade. Feel free to add salsa, guacamole, salt, pepper, and any other fresh spices you see fit.
