Never before has macaroni and cheese been considered 'acceptable' on a diet. Well, that's about to change. With a few simple alterations to conventional preparation, this Buffalo Chicken Mac and Cheese dish will feed a hungry army with muscle building nutrition and with an amazing taste that will have you second guessing the macro-chart!
-- Bulking Buffalo Chicken Mac and Cheese --
- 2lbs whole grain or Ezekiel elbow macaroni
- 2lbs fresh chicken breast (pre-grilled or pan fried and cubed)
- 1 cup fat-free milk
- 2 cup (16 ounces) 1% cottage cheese
- 1/2 finely chopped onion
- 4 Tbsp. grated fat-free parmesan cheese
- 1/2 teaspoon salt
- Pepper to taste
- 1.5 cup shredded fat-free cheddar cheese
- Optional: For spicy flavor, add 1/2c Franks® Red Hot®
Preheat oven to 350°. In a blender, combine the milk, cottage cheese, onion, parmesan cheese, salt and pepper, optional Franks® Red Hot®; cover and process until smooth. Pour into a bowl. Stir in the macaroni, cooked cubed chicken and 1 cup cheese. Transfer to a 9x13" baking dish coated with cooking spray. Sprinkle with remaining cheese. Cover and bake for 35-45 minutes. Uncover and bake 5-10 minutes longer or until edges are bubbly.
